Easy one banana muffin recipe

We eat a lot of bananas at home. On the odd occasion when we have one very ripe banana waiting to be eaten but no one does, I turn them into yummy muffins.

This recipe has been adapted as the original one had far too much sugar in it. My little girl loves these and will eat 2 at a time! These don’t last long in our house!

MAKES: 6-8 muffins

Ingredients

1/4 cup melted butter
1 ripe banana
1/3 cup brown sugar
1 tablespoon milk
1 egg
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup flour

Directions

1. Preheat oven to 180°C. Prep muffin tin with butter/spray or liners.

2. Melt butter in microwave for 30 seconds. Meanwhile, in a mixing bowl, mash your banana.

3. Then in the same bowl add brown sugar, milk, melted butter and egg. Mix together.

4. Add baking soda, salt and flour. Mix to combine.

5. Then fill the muffin tins 3/4 up and place in the middle of the rack.

6. Let them bake for 20 minutes or until the middle comes out clean with a knife.
